Traditional semi-carbonic whole bunch vinification
We seek to produce the best of each of our appellations according to the climatic characteristics of the vintage. Our primary objective lies in obtaining local wines that best characterize our protected designations of origin.
This parcel-based cuvée is harvested manually and vinified in a cement vat. The carbonic maceration lasts 12 days with regular punching down and pumping over in order to work as much as possible to extract the phenolic matter from our grapes. The malolactic fermentation is carried out then the Tree of Life is aged in a 500 liter Radoux (cognac) barrel for 10 months before bottling.
Winegrower's tasting: Its roots in our lands, heritage of the love of our fathers, lucky charm of our know-how, the vine symbolizes the Winegrower's Tree of Life. Like an immortal cycle, the vine loses its foliage in winter, draws from the earth and finds it again in spring. From plots of Saint Amour selected for their unique character, made of granite and quartz, you will be enchanted by its ruby color, its greedy and delicately woody mouth. This elixir of heart will not leave you indifferent for all the attention paid by a aging of 10 months in barrel.
